We have several new recipes this time, thanks to Cathy who has taken on the task of entering our potluck recipes. First is the colorful Eggplant Shakshuka that Cathy picked out and Tom put together -- so tasty! I had to look up shakshuka --- it's a Middle Eastern dish made with eggs poached in a spicy tomato sauce. This version cleverly substitutes eggplant for eggs:

We had two risottos at the potluck, the Spinach-Mushroom Risotto I brought that tastes better than it looks (it boiled over when reheated and lost its beauty ;-)

...and Diane's Mushroom Risotto with Peas, made in an Instant Pot. I am not familiar with this new appliance --- are there Instant Pot fans out there who could fill us in on its virtues?

Last time I encouraged everyone to sign up on our Mindful Cooking page on the PlantPure Pods website. Linda set this up for us so we can chat more easily with each other. So far 20 people have signed up and there are a couple of interesting questions there --- about Aquafaba and the uses of cashews ---- and I just posted an article there (one of Sigrid's that is included in this email.) There have been a few glitches but we're beginning to see the potential of this new meeting ground.
