Dried cherries give these cookies a special flavor. I've heard that cranberries work too.

Ingredients:

240 ml 1 c. rolled oats
12 dates, pitted (1/2 cup)
59 ml1/4 c. almonds
59 ml1/4 c. chocolate chips
16 dried cherries
5 ml1 tsp. vanilla extract
1 ml1/4 tsp. sea salt

Instructions:

Preheat oven to 375 F. Lightly oil or line a baking sheet with parchment paper.

Combine all ingredients in a food processor. Pulse until coarsely chopped and the mixture starts to bind, adding a spoonful of water if necessary.

Gently roll into 16 balls and place on baking sheet. Bake 10-15 minutes.

Lucy made these with 6 dates (all she had), added 1/2 c. almond butter and more cherries and left out the salt. She stirred in the cherries and chocolate chips after blending so they would stay whole. No baking! Easy and delicious.
