"Parkin" Ginger Cake

Parkin is an oats & treacle gingerbread cake from northern England, traditionally served on Guy Fawkes Night. Eliza made this version based on a recipe in The Joy of Cooking. She says, "This is my kind of cake, very moist and not too sweet. I have made it gluten free using buckwheat flour, but prefer the whole wheat. Enjoy!"

Oatmeal Pancakes

This recipe is an old friend that has been in my card file box for 30 years. A few years ago I replaced the eggs and milk with good results. They just get better and better---wonderful, thick, hearty pancakes! The blueberries are optional but I can't imagine doing without them. There is also an easy Gluten-free version on this website.
