Tofu Benedict

If you’re looking for a classy dish to serve at your next brunch, try this Tofu Benedict! Complete with its yummy vegan Hollandaise sauce, it easily rivals the “original” in both taste and visual appeal. The sauce is so tasty! Should you have any leftover, dress up your green veggies such as asparagus or broccoli by drizzling some Hollandaise sauce over them.

Oatmeal Pancakes

This recipe is an old friend that has been in my card file box for 30 years. A few years ago I replaced the eggs and milk with good results. They just get better and better---wonderful, thick, hearty pancakes! The blueberries are optional but I can't imagine doing without them. There is also an easy Gluten-free version on this website.
